2006 Glen Eldon Cabernet Sauvignon
The Barossa has been producing rich full-bodied Cabernet Sauvignon wines for over a century; our Cabernet Sauvignon continues this tradition. It is testament to our forebears that as an industry we do not forget the wine style that our successful industry was built on.
This combined with traditional winemaking enhanced by modern technology allows us to present you with consistently great quality Cabernet Sauvignon wines year in year out.
Viticulture
Deep alluvial soils in the south, sandy loams in the north and the hungry skeletal soils of the Eden Valley all combine to provide us with special parcels of intense fruit. The Barossa has a Mediterranean climate; warm summers and cold winters also offer ideal viticultural conditions. In 2006 vintage was highlighted by stunning ripe fruit, which resulted in brilliant colour, flavour and natural tannins. The Baume reached 14.9 degrees before harvest. The fruit was harvested in the cool of the night and delivered to the winery ready for crushing.
Winemaking
Glen Eldon Wines philosophy is to produce rich, varietal regional wines. Our Cabernet Sauvignon exemplifies this. With such intense fruit in 2006 fermentation on skins was restricted to five days before being pressed off and the pressing being returned to the freerun.
Maturation took place in a blend of French and American Oak hogsheads which has added further structure and complexity to the wine. Although the wine is drinking superbly now it will benefit from further maturation over the next 6 – 8years.

We recommend you enjoy this wine with roast lamb and rosemary jus.
