The Barossa has been producing rich full- bodied Shiraz wines for over a century. Our Dry Bore Shiraz continues this tradition. Located in the heart of the Barossa, vineyard continues to impress us with producing small yet concentrated bunches of premium Shiraz.
This combined with traditional winemaking enhanced by modern technology allows us to present you with consistently great quality Shiraz wines year in year out.
Viticulture
Rich, fertile, sandy loam and dark bisque soils provide ideal growing opportunities for vines. The Barossa has a Mediterranean climate, warm summers and cold winters which offer ideal viticultural conditions. The Baumé reached 14.5 before the fruit was hand picked and delivered to the winery ready for crushing and fermenting.
Winemaking
The fruit was, destemmed, split and fell into traditional open fermenters, inoculated with rehydrated yeast culture and allowed to ferment for approximately 10 days. The ferment underwent five rack and returns to extract greater flavour and colour. The wine has been matured in American and French hogsheads for 24 months, resulting in exceptional structure and balance; the 2005 Dry Bore offers elegance, power and finesse.
Foods
Ideally suited to beef stews and rare roast beef or soft cheeses. However, just as good with a steak, chips and a few friends!
