Glen Eldon's new release Shiraz Mataro follows in the tradition of Barossa wines. Rich, full flavoured and mouth filling, this wine has it all. Small concentrated parcels of fruit are produced from vineyards located in the heart of the Barossa. Combined with skilled winemaking, boosted by modern technology, the resultant wine displays great varietal flavours.
Viticulture
The Barossa’s Mediterranean-like climate, with warm summers and cold winters, offers ideal viticultural conditions, further enhanced by the fertile sandy loam and dark Biscay soils supporting the vine growth. Fruit was hand picked in the cool of summer mornings when baume reaching 14.5 degrees and transported to our winery for crushing and fermenting.
Winemaking
Use of time-honoured winemaking processes has resulted in a sophisticated wine. With small parcels of fruit crushed, destemmed and then pumped over into traditional open fermenters, the juice was allowed to sit quietly fermenting for 10 days, before undergoing five rack and returns to extract greater flavour and colour. French and American hogsheads were used for maturation adding structure to the wines. Our newest blend offers elegance and an explosion of fruit in your mouth.
Food
Ideally suited to beef stews and rare roast beef or soft cheeses.
However, just as good with a steak, chips and a few friends!
