Our first release of Glen Eldon ‘Sparkling Cinnabar’
“Cinnabar” is a rich vermillon red mineral with a long and fascinating history. Deemed to ensure success in business and attract wealth, merchants stored Cinnabar in their money chests.

Our Merlot vines are located in Eden Valley they consistently produce small quanties of quality of fruit. Extended ripening time due to cool nights & high altitudes allow the fruit to develop slowly resulting in concentrated flavours, Harvesting on flavour and colour provide us with rich intense fruit guaranteed finished wine with exceptional depth and complexity

This sparkling merlot has been barrel matured for the past four years awaiting secondary fermentation. Matured in French & American oak hogsheads which has added further structure and complexity to the wine. After fermentation is complete, the wine is filtered under counter pressure, liqueured and then packaged.

We recommend you enjoy this with carpaccio of beef with a dab of horseradish..
